A Stir-Fry is one of the quickest and easiest meals that you can make. I find myself making a stir fry meal, especially when I want to clean up the remaining veggies in my refrigerator. It is also one of the ways that I get my picky eater to have some healthy vegetables!

Chicken Stir-fry is made with lean meat and vegetables, thereby, making it a healthy addition to your meals. It is also low in fat and can be customized to your preference.

Tips for the Perfect Stir-Fry:

  • High Heat: Make sure your pan is hot before adding ingredients. This helps to sear the meat and vegetables, giving them a nice texture and flavor.
  • Preparation: Have all your ingredients prepped and ready. Stir-frying is a fast process, and you won’t have time to chop vegetables while cooking.
  • Variations: Feel free to add or substitute any vegetables you like. Snow peas, snap peas, mushrooms, and zucchini are all great options.

Ingredients
  

  • 1 lbs. chicken breasts cut into cubes
  • ½ red bell pepper diced
  • ½ green bell pepper diced
  • 1 small onions diced
  • 3 chili peppers diced
  • 1 tbsp cornstarch
  • 3 tbsp canola oil
  • 1 tbsp black pepper

Sauce

  • ¼ cup chicken broth
  • 2 tbsp cornstarch
  • 2 tbsp honey
  • 1 tbsp sesame oil
  • 1 tsp soy sauce
  • 1 tsp dark soy sauce
  • ¼ tsp oyster sauce

Instructions
 

  • Combine all the ingredients for the sauce together and mix to incorporate. Set aside.
  • Season the chicken breasts pieces with cornstarch and black pepper. Add 3 tablespoons of the sauce into the chicken, mix together and leave to stand for 5 mins.
  • Add oil into a pan, heat up on medium heat and cook chicken breasts in batches. Cook on both sides of chicken till golden brown. Take out and set aside.
  • Wipe pan clean using a paper towel, add the remaining oil, diced onions and garlic and cook for 30 seconds.
  • Go in with the chili peppers and diced red and green bell peppers. Sautee for 2-3 mins, careful not to overcook the vegetables.
  • Add back the cooked chicken breasts followed by the sauce. Combine together and cook till sauce thickens to your desired consistency. Serve with rice, noodles or pasta!

Notes

*Control your salt content in this stir-fry by adding a little salt or skipping it out completely. The soy sauce, dark soy sauce and oyster sauce are already salty. I like to use low-sodium soy sauce to help control the salt content.
*Be careful not to overcook the vegetables to avoid it looking soggy after cooking. 
*Some additional vegetable options include, broccoli, carrots, spring onions and green beans.
*If you do not have fresh chili peppers handy, other variation can be hot sauce or dried chili peppers.
