Brown or overripe bananas are never thrashed in my home. Whenever I see an overripe banana on my countertop, I start to picture banana bread in my head immediately. This is also one of my family’s best treats to have. Served with or without a dash of butter and a hot chocolate drink – no wonder it is loved by so many!

Moist Banana Nut Bread
Marry the sweetness of ripe bananas with the earthy taste of toasted walnuts, in this banana nut bread. The perfect companion for cozy mornings or a sweet treat any time of the day.
Ingredients
- 3 bananas ripe
- 1 tsp baking soda
- 2 cups flour
- 1/4 tsp salt
- 1 tsp vanilla extract
- 1/2 cup sugar
- 1/2 cup brown sugar
- 1/2 cup melted butter
- 1/2 tsp cinnamon
- 1 egg
- 1/2 cup chopped walnuts
Instructions
- Preheat oven to 350f. Transfer bananas to a bowl and mash.
- Mix bananas, egg, sugar, brown sugar, vanilla, cinnamon and melted butter. Combine.
- Add in the flour, baking soda, and salt. Mix together.
- Add the chopped walnuts, combine.
- Transfer to a baking pan. Sprinkle some walnuts on top and bake for 60 minutes.
Notes
- Be sure to use ripe bananas to get the sweet unique taste of baked bananas.
- Substitute the walnuts with pecans if you do not like walnuts, or leave it out altogether if you have a nut allergy.
- These can be made into muffins. For muffins, bake for 30-35 mins.
