Caribbean Green Seasoning

- 1 bunch scallions / green onions
- 3 Large green bell peppers deseeded
- 1 small onion
- 1 head garlic 10 cloves
- 2 pcs habanero peppers for more spicy option, include seeds.
- 1/4 cup cooking oil
- 1 bunch cilantro
- 1/2 bunch basil
- 4 small anaheim peppers
- 1/2 bunch parsley
- 1 head ginger
- 1 tsp all-spice
- 1 tsp bouillion
- 1/2 tsp salt
- 1 tsp thyme
Remove seeds from green bell peppers. Roughly chop up the green bell peppers, anaheim peppers, parsley, basil, cilantro, onions, habanero peppers, ginger and garlic.
Transfer to a blender or food processor. Add a little oil and pulse all ingredients together until fully incorporated.
Add oil to a pan, transfer the green seasoning blend into the pan, season with bouillon, salt, all-spice and thyme. Cook for 4-5 mins, or until it thickens.
Remove pan from stove, transfer spice blend to a mason jar or ice cube maker. Refrigerate or freeze (ice cube maker).
*The green seasoning is cooked in oil when you want to use it as a spice and as a dipping sauce.
*If you want to use it just as a spice blend, skip the cooking and freeze after processing.
*To use your frozen green seasoning, transfer cubes directly to your recipe, no need to thaw!
*You can store frozen green seasoning for up to 3 months.
