Easy Egg Breakfast Tacos

- 4 eggs large
- 1 Avocado slices
- ½ red bell pepper
- ½ green bell pepper
- 3 slices bacon cut into pieces
- 1 medium onion chopped
- 1 tsp butter
- ½ tsp black pepper
- 3 flour tortillas
- ½ tsp chili flakes
- 1 tbsp lime juice
Sauce
- 2 tbsp mayo
- 1 tsp honey
- ½ tsp lime juice
- ½ tsp garlic powder
- ½ tsp onion powder
- a pinch of salt
Cut the bell peppers and onions, transfer all to a bowl. Season with chili flakes, salt and lime juice. Mix together and set aside. Cut avocado slices and set aside separately.
In another bowl, combine all the ingredients for the sauce and set aside.
Break eggs into a bowl, add salt, and black pepper, whisk together. In a skillet, add butter, heat up on medium-low heat.
Add the egg mixture and cook until eggs are firm. Remove the eggs from the skillet, wipe the skillet with a paper towel. Add the bacon pieces and cook till sightly brown.
Assemble the tacos by layering the tortillas with eggs, bacon pieces, mixed vegetables, and avocados. Top it off with the sauce. Serve warm!
