Simple Avocado Toast Recipe

Ingredients
  

  • 3 Avocados ripe
  • 1 Roma Tomatoes diced
  • 2 tbsp Red onion chopped
  • 1 tbsp Lime juice
  • 2 Slices Pumpernickel bread buttered
  • ½ tsp Garlic salt
  • ½ tsp black pepper
  • 2 tbsp Fresh Cilantro chopped
  • 1 Jalapeno chopped

Toppings

  • 1 egg scrambled
  • 1 bacon cooked

Instructions
 

  • Start by making the Guacamole. Gently remove the seed from the avocados and transfer to a small mortal or bowl. Mash avocados into soft chunks. Remove the seeds in the tomatoes and chop the outer layer into bits. Add to the avocados, now add the chopped onions, jalapenos, cilantro, spices and lime juice. Mix together gently. Cover and refrigerate.
  • Heat up a skillet or pan and transfer the buttered bread into it. Pan toast the slices on both sides. Take off skillet and leave to cool down.
  • Bring out the guacamole from the refrigerator. Now arrange the toast by adding the guacamole to the toast bread, add the eggs and bacon bits. Serve.

Notes

*Avocado toast is best served warm. Freeze any leftover topping for up to 3 days.
*You can make your guacamole ahead and refrigerate it for when you are ready to make the toast.
*Avocado tends to turn brown when it is cut and is in contact with oxygen. It may not look appealing but is still safe to eat, as long as it is stored in the refrigerator within 3 days. You can also use a spoon to scoop out the brown part.
